Heidi and Morgan both decided, after many taste testing, that this was the BEST Gingerbread ball recipe we could find! We hope you guys enjoy them as much as we did. Just in time for Christmas!

  • Serves: 10 balls

Ingredients:

  • 1 1/4 cup of pitted dates
  • 1/4 cup of almond meal
  • 1/4 cup of buckwheat groats
  • 3/4 cup quinoa flakes
  • 1 tbsp. of cinnamon
  • 1 tsp. of ginger
  • 1/2 tsp. of nutmeg
  • 1/4 tsp. of vanilla
  • 1/4 tsp. of cloves
  • 2 tbsp. of water
  • 1 tbsp. of almond spread
  • 2 tbsp. of coconut oil

Instructions:

  1. Blend all ingredients. except for dates, in a high speed blender until combined
  2. Add in half of the dates and process until well combined, then add the other half of the dates until the consistency is similar to that of dough
  3. Scoop the dough out into 1 tbsp. sizes, roll into balls
  4. These balls are best serves frozen or very cold, so let them sit in a fridge or freezer for about 4 hours
  5. Optional: We rolled these in shredded coconut which helped make these a little less sticky when you store them and eat them!
